The principle of operation of a hot smoked smokehouse is based on fumigation of products with smoke, which rises from below during the combustion of fuel. In this case, the food is subjected to heat treatment and acquires a peculiar aroma. All types of designs have one circuit diagram, the difference is only in the heat source. You can make the device with your own hands from metal sheets or improvised tools that can always be found in the summer cottage.
Principle of work and types of designs
The basis of the hot smoked smokehouse device is a box of metal, in which several grates made of the same material are placed. Below is a drip pan and a combustion chamber. As fuel wood chips are used. Burning, they form smoke rising up.
Hot smokehouse allows for a short period to achieve product readiness. The time taken for cooking is no more than 2-3 hours.
The following types of devices are available:
- Stationary option. It is made of brick and put on the foundation.
- Portable product. It is a metal box that is mounted on a bonfire or barbecue.
- Large smokehouse. This is a dimensional metal product that is constantly used by fishermen. Its capacity allows you to smoke large fish without cutting.
- Electric apparatus. It has an undeniable advantage over other options. There is no time required to make a fire. The heating process is fed adjustment.
- Coal and gas appliances. In the first case, briquettes from sawdust or shredded branches are used as fuel. In the second embodiment, a gas cylinder is connected.
- Home smokehouse. This is the name of any device that is used at home. It is heated on an electric or gas stove.
Do-it-yourself smokehouse
To make the right version of a home smokehouse, you need to prepare tools and materials in advance.
These include:
- metal sheets with dimensions: 60 x 155 x 2 mm, in an amount of 2 pcs;
- stainless steel sheet;
- rebar rods;
- Bulgarian;
- apparatus for welding.
At the first stage, a drawing is prepared. Then, based on the developed project, the construction of the device begins.
It consists of the stages:
- A sheet of metal is cut by a grinder into 4 equal parts.
- A rectangular box without bottom and top is cooked from them. It is important to ensure the tightness of the welds.
- A bottom is formed from the second metal sheet, which is welded downward.
- A lid is welded from a sheet of stainless steel. In terms of dimensions, it is slightly larger than the main box. Deep sides are welded to the sides.
- Guides are welded inside the smokehouse, on which 2 levels of reinforcement are installed. One is located below (it is necessary to install a pallet on it), and the upper level is used as a stand for smoking products.
- Handles for carrying the product are welded on each side.
Instead of metal sheets, you can use a barrel or an iron bucket.
Hot smoked smokehouse allows you to quickly bring to readiness any food. Depending on the possibility and necessity, it is made portable or stationary.
Versatility designs allows you to use some types even in the apartment, since heating can be carried out on a conventional stove.
